Candied Garlic Pickle Glazed Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts

  • Salt and pepper to taste

  • 1 tablespoon olive oil

  • 1/4 cup candied garlic pickle brine

  • 1/4 cup honey

  • 1 tablespoon Dijon mustard

  • 2 cloves garlic, minced

  • 1/2 teaspoon dried thyme (or any preferred herbs)

Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. Season the chicken breasts with salt and pepper on both sides.

  3. Heat the olive oil in an oven-safe skillet over medium-high heat. Once hot, add the chicken breasts and cook for 3-4 minutes per side or until golden brown.

  4. Meanwhile, in a small bowl, whisk together the candied garlic pickle brine, honey, Dijon mustard, minced garlic, and dried thyme until well combined.

  5. Pour the candied garlic pickle glaze over the browned chicken breasts in the skillet. Make sure the chicken is evenly coated with the glaze.

  6. Transfer the skillet to the preheated oven and bake for about 15-20 minutes until the chicken is cooked and reaches an internal temperature of 165°.

  7. While the chicken is baking, you can baste it with the glaze from the skillet a couple of times during the cooking process to enhance the flavor.

  8. Once cooked, remove the skillet from the oven and let the chicken rest for a few minutes.

  9. Serve the candied garlic pickle glazed chicken hot, spooning some of the remaining glaze from the skillet over the top as a sauce.

The caramelized brine from the candied garlic pickles adds a sweet and tangy flavor to the chicken, creating a delicious glaze. This recipe pairs well with roasted vegetables or a side of rice. Enjoy!
